Instructor Biography:
Wanda Barras is a National Award Winning Cheese Maker with 10 years experience making goat cheese and running Belle Ècorce Farms’ Très Belle Chèvre, a State Licensed goat dairy and cheese facility. A self-described “foodie” and good cook, Wanda, who comes from a family of good cooks, is adept at creating scrumptious recipes featuring her award winning goat cheese. She is happy to share her recipes and knowledge with eager students.

Our all-day “Goat Husbandry Workshop” will get you involved in the day-to-day care of a goat dairy herd. You will learn about Housing, fencing, feeding, health care, grooming for milking, the dairy buck, hoof trimming, & disbudding,
MILKING & MILK HANDLING
Our all-day “Milking & Milk Handling Workshop” you will learn how to milk a goat with a machine and by hand. You will learn where milk comes from. We will go thorough milk handling procedures and the pasteurization process. You will see how we make cheese and will get to taste our award winning goat cheeses.
LEARNING TO MAKE SIMPLE CHEESE AT HOME
For those interested in “Making Simple Cheeses at Home” we will spend the day learning about the different kinds of cheeses and how they are made. We will, together, make some simple goat cheeses that can easily be repeated in your home with store bought milk. You will be able to take some of the cheese you have made home! Numerous handouts and recipes will be included.
COOKING WITH GOAT CHEESE
In our “Cooking With Goat Cheese Workshop” you will learn about how to handle goat cheese and cook with it. We will, together prepare a 4 course lunch using goat cheese in each course. We will dine together and enjoy our creations. Wine(s) will be included. You will go home with recipes and handouts about cooking with goat cheese.

Please only one person per application. Applicant must be 18 or older.
Please fill out the application below. This is a preliminary registration for us to get an idea of the number of people that are interest in attending one or more of our workshops. We will set up sessions accordingly. We will contact you with the the date the workshop(s) you sellected will be held. We will require payment in order for you to be put on the class roster. As classes will be small, spots will fill up quickly so don't hesitate to sign up and send a deposit as those attending will be first come first serve.
After you sign up we will contact you about deposit and exact dates and time of you scheduled workshop. Our workshops will be held from early morning to late afternoon unlesss otherwise stated. Each class will be hands-on, and filled with information which will include handouts, reference lists, and suggested readings,etc. deposits are non-refundable unless class is cancelled by us.If there are any changes in workshop content or if we decide to combine, add or subtract any workshops from our list we will let you know.
Three Day “Introduction to Goat Dairying and Cheese Making”---
Would just like to spend a few days getting up close an personal with dairy goats, tasting national award winning goat cheese and getting an insiders look at cheese making? Our fun and informative 3-day course will teach you about the basics of goat husbandry, milking & milk handling procedure, and how goat cheese is made. This hands-on course will get you involved in the day-to-day care of a goat dairy herd. You will learn how to milk a goat with a machine and by hand. We will go thorough milk handling procedures and the pasteurization process. You will see how we make cheese and will get to taste our award winning goat cheeses. The class will make a batch(s) of simple goat cheese. You will be guided through the procedure from start to finish. You will be able to take some of the cheese you have made home! Numerous handouts and recipes will be included. A simple lunch will be prepared, daily. We may invite you to take part in lunch preparation, as this is a perfect time to discuss recipes and cooking with goat cheese.
Workshops will be held on the farm. Classes will be kept small and personal. Numbers will be limited as we prefer small classes to give our students a more personal farm experience.
Because of the logistics of holding a 3 day, all day workshop we have decided to discontinue this program. Maybe we will decide to offer 3 day and 2 day workshops in the near future. ...Wanda Barras
